How to disable automatic time stamping in interactions?

To disable automatic time stamping in Simple CRM :

go to the module Admin CRM (menu top -> Admin CRM)
if you are a Simple CRM Administrator, click on the user concerned
in the user's profile, uncheck the "Automatic time stamp" box

click on Save
